Ingredients

  1. For the dough
  2. 1 cupyellow corn flour (about 120 grams)
  3. 1 cupwarm water (about 240 ml)
  4. 1 pinchsalt
  5. 1 cupshredded melting cheese (such as mozzarella)
  6. For the marinade
  7. 5pork cutlets
  8. 2 tablespoonsachiote paste
  9. 1-2garlic cloves
  10. 1 pinchcumin
  11. 1 pinchoregano
  12. 3whole cloves
  13. 3allspice berries
  14. Salt, to taste
  15. Sour orange juice or vinegar
  16. 1 canpineapple rings with juice
  17. For serving
  18. Chopped onion
  19. Chopped cilantro
  20. Radishes
  21. Avocado
  22. Green salsa and red salsa
  23. Limes

    Tortillas:

    Mix the water and salt, then gradually add the corn flour and half of the shredded cheese using a fork. Knead until the dough is smooth and manageable. Let rest for about 20 minutes, then form into golf ball-sized balls.

    If you don't have a tortilla press, use a cutting board or a heavy skillet. Heat a griddle and cook each tortilla for a few minutes on both sides, adding a little cheese as they cook.

    Place the tortillas on a griddle and cook for a few minutes. When you flip them and they're cooked on both sides, add the cheese.

    Blend the garlic, cumin, oregano, cloves, allspice, salt, achiote paste, orange juice, and vinegar to taste. Once the marinade is ready, coat each pork cutlet with it, layering them until all the meat is covered. Let marinate for at least 4 hours.

    Add the pineapple slices. For best flavor, marinate the meat overnight. Cook the marinated pork on a skillet or grill, as you prefer. Serve in tacos, burritos, quesadillas, or sandwich rolls. Serve with avocado, spicy salsa, onion, cilantro, and limes.

    Once the meat is marinated, grill it on a griddle. I cut the meat before marinating, but you can also grill the whole pieces.

    Place some meat on each tortilla, top with onion, avocado, cilantro, limes, and salsa. Cover with another tortilla and enjoy.
