Ingredients

  • 3 tbspghee / clarified butter
  • 2bay leaf / tej patta
  • 2 inchcinnamon stick / dalchini
  • 1star anise
  • 5 cloves/ lavang
  • 4cardamom / elachi
  • 1/2 tsppepper
  • 1/2 tspcumin seeds / jeera
  • 1medium onion, finely chopped
  • 1 tspginger - garlic paste
  • 5beans, chopped
  • 10florets gobi / cauliflower
  • 1/4 cuppeas / mattar
  • 1carrot, chopped
  • 1potato, cubed
  • 3mushrooms, sliced
  • 1 cupcurd / yogurt
  • 1/2 tspturmeric / haldi
  • 1 tspkashmiri chilli powder / lal mirch powder
  • 1/4 tspcumin powder / jeera powder
  • 2 tspbiryani masala
  • to tastesalt
  • 6 tbspcoriander leaves, finely chopped
  • 20mint / pudina leaves, roughly chopped
  • 6 tbsponions, fried
  • 1 1/2 cupsbasmati rice, soaked 30 minutes
  • 2 tbspsaffron water
  • 2 cupswater

Steps

  1. 1

    Firstly, in a large cooker heat ghee and saute spices.further, saute onions and ginger - garlic paste well.

  2. 2

    Additionally, add in mixed vegetables and saute till all vegetables shrinks.

  3. 3

    Now add in curd keeping flame on low.also add in spice powder and salt to taste. mix well.also add in coriander leaves, mint leaves and fried onions.

  4. 4

    Spread soaked basmati rice.further sprinkle biryani masala powder and salt.also place in coriander leaves, mint and fried onions.

  5. 5

    Additionally, pour in saffron water and ghee.pour water and simmer for 25 minutes.

  6. 6

    Finally, serve veg biryani prepared in cooker along with raita.
