Coconut cookies
#goldenapron (post24)
Steps
- 1
Sift maida & baking powder, then add desicated coconut and mix well.
- 2
Now in a mixing bowl take butter, add confectioners sugar (you can also add regular powder sugar) and beat the butter and sugar nicely with an electric beater till light & fluffy. Then add vanilla extract and again beat it for another 30seconds.
- 3
Now add sifter flour and coconut mix to the butter mixture and beat it on a very slow setting, just to combine it together, then add 1tsp milk and give it one last mix.
- 4
Now take 1tbsp dough in your palm and roll it into a ball, then flatten it slightly and coat it with dedicated coconut.
- 5
Place the coated cookies on a baking tray lined with parchment paper, and bake them in a preheated oven over 170°c for 20-22 minutes, keep checking after 18 minutes as every oven behaves differently.
- 6
Transfer the baked cookies on a wire rack and cool them for 30 minutes before packing. These cookies stay well for 5-7 days, store them in air tight container.
