Maghaz masala (beja fry) is a deep fried cow brain's delicacy. Maghaz bhuna is a popular dish in Bangladeshi cuisine, which is cattle or sheep/goat brain sautéed in hot spices.

Maghaz masala (beja fry) is a deep fried cow brain's delicacy. Maghaz bhuna is a popular dish in Bangladeshi cuisine, which is cattle or sheep/goat brain sautéed in hot spices.
Steps

Soak cow brain for 15 minutes. Drain, clean, de-vein and cut into coarse pieces.

In a bowl take oil, vinegar, red chilli powder, turmeric powder, dhaniya powder, garammasala powder, salt and cumin powder and make a paste.

Now add brains pieces and marinate it for 4-5 hrs or max 1 day to absorbe spices fully.

Now fry in a pan at low flame.. covered the lid of pan.

Cook until the brain become tender and golden in colour..oil raises out and all water from brain dry out.

Sprinkle coriander leaves on top.Now it's ready to serve with chapati..
