Cooking Instructions

First, make the black pearls. Boil the water with brown sugar until it reaches a boil, then let it cool.

Add potato starch and knead into a dough, then cut into small pieces and roll into balls.

Bring a pot of water to a boil over medium-low heat. Add the desired amount of pearls (store the rest in the fridge for later use) and cook for 15 minutes. Turn off the heat and let them sit for another 15 minutes.

Remove the pearls and immediately soak them in ice water for 1 minute, stirring gently.

Drain the black pearls and set aside.

Pour the milk into a pot and add the tea bags. Simmer for 5 minutes (add a packet of instant coffee for a richer flavor), then add 1 teaspoon of sugar.

Strain the milk tea, and once it has cooled slightly, add the black pearls and refrigerate.

For the cheese foam, mix the whipping cream, sugar, and salt until it forms soft peaks.

Add 2 tablespoons of fresh milk (about 30 ml) and mix well, then set aside.

Mix 1 tablespoon of fresh milk (about 15 ml) with cheese cream until smooth and without lumps.

Combine with the prepared whipped cream and mix until creamy.

Add the cheese foam to the bubble milk tea.
