On days when I want a quick vegetarian meal, fried tofu with lemongrass and chili is the simplest and fastest option.

Cut the block of firm tofu diagonally into two triangles. Make shallow cuts at the corners. Mix the minced lemongrass and chili with a pinch of salt, then stuff the mixture into the cuts in the tofu.

Heat just enough oil in a nonstick skillet. When the oil is hot, add the tofu and fry over low heat, turning until all sides are golden and the lemongrass is fragrant. Serve with soy sauce and chili.
