Extremaduran Migas with Fried Egg 🍳

Extremaduran Migas with Fried Egg 🍳
Steps
- 1
First, cut the baguette into small pieces.
- 2
Next, prepare and chop all the ingredients.
- 3
Start by frying the peppers, since they take the longest to cook. Set them aside in a bowl while you prepare the other ingredients.
- 4
In the same oil, add the garlic first, then the chorizo, and finally the prosciutto. When almost done, add the smoked paprika and a pinch of salt.
- 5
Lower the heat and add 1/2 cup water (about 120 ml).
- 6
Now add the peppers back in, then gradually moisten the bread pieces with the mixture, stirring well. Add just enough so all the bread is damp but not soaked.
- 7
Finally, when ready to serve, heat a skillet without oil and fry the migas until they are slightly golden, about 3-4 minutes over medium-high heat.
