For making KHAJA PURI we'll knead a dough.put all purpose flour in a big bowl.add 2 tsp ghee. And add a pinch of salt. And Mix well.

Add a little water to it and prepare a hard dough just like the a to prepare a puri.make sure to add lukewarm water to it. Prepare a dough of hard consistency.

Cover a dough and keep it aside for 15 to 20 minutes. The dough will set will be ready.

To make a sugar syrup, Take sugar and water to it and make a two string syrup.and keep aside

20 minutes are over and over dough is now set.knead the dough again till it has a smooth consistency. We will make round balls with th help of a dough. We have made around 7 balls from this much dough.

Take each ball in your hand, press it till it becomes a flat round.once all the balls are ready, cover it with a cloth, so that do not get dry. Now we will roll out the balls smoothly one by one roll out a thin poori.

Pick up the poori and put it on a plate. Roll out the other pooris in similar way. Now, we have rolled out all the pooris.

Now we will prepare the satta(mixture of oil and all purpose flour) Take oil in a bowl and add all purpose flour to it.stir it well till it becomes fluffy.we have mixed the oil and all purpose flour properly.our satta is now ready.

Put the satta on top of the poori and spread it evenly all over. spread the satta on all four sides.Now put the other puri on top of this.

Again..put 1 tbsp of satta on top of this and spread evenly.put the third poori on top of this.put satta on the top use a spoon and spread it all over.repeat the method on 4 poori's.

Now we'll fold it this way and make a roll.make a roll this way.

Now let's cut it into pieces.Now cut it into pieces of 1/2 cm each.we've cut the roll into pieces

Pick up a piece of khaja puri.and put on a rolling board. Press it this way and roll it out.we can see the layers, This means that our khaja poori is now rolled out.

Now we'll fry them. Let's check if the oil is hot enough to fry the khaja poori. We need medium hot oil to fry the khaja poori. Fry it medium low flame.put as many khaja poori in the pan as can come at one time.

Turn on the side of the khaja poori and cook till they appear golden brown in colour from both the sides. Take out the khaja puri once they are golden brown. Fry the rest of the khaja poori in the same way.

Then deep each khaja puri pieces in it one by one...and take it off in a serving plate.
