Thai Cassava Porridge

Hello, my Cookpad friends. How are you? Sorry I haven't shared any recipes for the past two months, especially the simply tasty ones from dapurVY. I'm doing well and healthy. Thank you so much for your messages and DMs on IG... I'm so touched. May God always protect us in any situation... amen.

This is similar to Thai cassava with coconut milk sauce, but a different version. The real reason for making this is to use up cassava that isn't very good, like when it's not soft enough. Instead of wasting it, I usually make it into a coarse porridge. Adjust the sweetness to your taste, and you can use either coconut milk or fiber creme for the sauce, depending on your preference. I prefer to serve it in cups and chilled from the fridge. It can also be a business idea. Hope it's useful.

Ingredients

  • Porridge Ingredients:
  • 1.1 lbsCassava, peeled, core removed, diced
  • 3 3/4 cupsWater (adjust based on the cassava's condition)
  • 1Pandan leaf
  • 1 1/2 tbspGranulated sugar
  • 1 tbspSweetened condensed milk
  • 1/4 tspSalt
  • VLA Ingredients:
  • 1/2 cupWater
  • 2 tbspFiber creme
  • 1 tbspCornstarch
  • 1Pandan leaf
  • 1little Vanilla (optional)
  • 1little Salt

Steps

  1. 1

    Boil the cassava with water and pandan leaf until the cassava breaks down.

    Add sugar, sweetened condensed milk, and salt. Cook while stirring until the sugar dissolves, then turn off the heat. NOTE: If you like it sweeter, you can add more sugar.

    VLA: Cook all VLA ingredients while stirring until it bubbles. NOTE: You can substitute fiber creme with thick coconut milk.

    Serving: Pour the porridge into a cup, drizzle with VLA. I prefer it cold, so I cover the cup and store it in the fridge.
