Turkey Gravy (Salsa)

How to make turkey gravy to serve with your Thanksgiving turkey. This recipe assumes you have just roasted the turkey and are ready to make the gravy. There’s nothing better than a silky sauce made from the turkey drippings, enriched to go perfectly with turkey breast and mashed potatoes. It’s very easy and makes about 4 cups.

Once the turkey is done, remove it from the oven, take the turkey out of the pan, and pour the drippings through a fine mesh strainer into a saucepan, discarding the vegetables. Let it sit for a couple of minutes so the fat separates from the juices.

Spoon off 4 to 6 tablespoons of fat, discard the rest, and add enough turkey broth to the drippings to make 4 to 5 cups of liquid.

In a skillet or roasting pan, add the reserved fat, sprinkle with flour, and whisk for 2 to 3 minutes until it turns a nice brown color. Add the turkey broth and drippings mixture, and stir for a couple of minutes.

Simmer and stir until the gravy thickens to your desired consistency. Season with salt and pepper and serve in a gravy boat.
