Grind the beef with the remaining ingredients, except for the onion juice, using a meat grinder with a coarse plate. Repeat grinding twice.

Knead the kofta mixture for 10 minutes until well combined and fine meat fibers appear.

Refrigerate the kofta mixture for 3 hours. Shape the kofta onto skewers, wetting your hands with the onion juice as you form each kebab.

Grill the kofta skewers over charcoal, or place the shaped kofta on skewers in a greased baking pan and bake in a preheated oven at 400°F (200°C) for 25 minutes. Serve with a sprinkle of chopped parsley on top.
