This is a great recipe for using up leftover pumpkin over Halloween. And provides a bit of relief from all the trick or treat sugar overload! #halloweencontest

Add the dry ingredients to a food processor and pulse to mix well. Add the oil and water so that the mixture forms a ball.

Remove the dough and place on a sheet of parchment paper. Place another sheet of parchment paper over the dough ball and roll out as thinly as possible.

Cut your shapes out of the dough and using a fish slice, gently transfer the shapes to baking try lined with parchment paper. If you are not cutting out shapes, use a knife or pizza cutter to score lines in the dough forming 1 ½ inch long squares

Gently press pumpkin seeds into the dough and sprinkle with sea salt. Bake on the top shelf for 20-30 minutes (the longer you bake them the crisper and harder they will be).

Remove the crackers from the oven and allow them to cool and harden. Once cool you can snap along the scored lines to make individual crackers.
