Ingredients

3 to 4 servings
  1. 250-300 gramscauliflower
  2. 2-3potatoes
  3. 1/2 tablespoonginger paste
  4. 1-2finely chopped green chilies
  5. 1-1 1/2 tablespoonoil
  6. 1/2 tablespooncumin seeds
  7. 1 pinchasafoetida
  8. 1 teaspoonred chilli powder
  9. 1 teaspooncoriander powder
  10. 1/2 teaspoonturmeric powder
  11. 1/2 teaspoongaram masala powder
  12. to tasteSalt according
  13. 1-2 tablespoonwater
  14. Handfulwashed and chopped fresh coriander leaves for garnishing

Steps

  1. 1

    First of all soak chop the cauliflower in medium sized florets. Keep the florets in water for 5 to 8 minutes,so that hidden worms in the cauliflower are removed. Wash and rinse properly. Also wash and chop the potatoes into medium size.

    Take a karahi, add oil and heat it properly.

    After that add cumin seeds, asafoetida, ginger paste and green chilies. Saute it for 2 minutes on medium to high flame.

    Now add cauliflower florets, chopped potatoes. Stir and mix everything properly.

    Then add turmeric powder, red chillypowder, coriander powder, garam masala powder,salt. Stir and mix properly on flame for about 2 to 3 minutes. Between medium to high flame.

    Now add 1 to 2 tablespoon of water in the karahi and stir. Cover it with a lid and let it cook for 6 to 8 minutes on low flame. In between check and stir.

    After the gobi aloo is cooked properly add dry mango powder (amchur powder).And mix,stir nicely. Switch off the heat (stove).

    Garnish with fresh coriander leaves. Aloo gobi is ready to serve with pooris or paratha or chapati.

    IMPORTANT POINTS : 1)Instead of amchur powder tomatoes can be used. (2) Can also be made by adding peas if want.(3)Fresh spinach leaves or methi leaves can also be used for making aloo gobi.so can do variations in making aloogobi in your way
