This immune boosting recipe is for my lovely friend Zain, who works tireless hours in A&E.

Ingredients

45 - 75 minutes
2 servings
  • Splashcoconut oil
  • 1large yellow onion, cut in half and finely shredded
  • 3garlic cloves, minced
  • 1celery stalk, sliced
  • 250 gwoodland or shitake mushrooms, roughly chopped
  • freshly ground sea salt and white pepper
  • 3 cmpiece turmeric, shredded
  • 3 cmpiece ginger, finely shredded
  • 6 cupsstock (preferably chicken bone stock)
  • 1 headbok choy, bottoms off and loosely chopped
  • To serve
  • handfulkale, torn off the stalks
  • 1carrot, finely shredded
  • 1/2avocado, thinly sliced (optional)
  • 1/2red chilli, thinly sliced (optional)

Steps

45 - 75 minutes
  1. 1

    Heat the oil in a large pot over medium heat, add the onions and saute for 5 minutes until translucent.

    Add the garlic and cook for a further minute.

  3. 3

    Add the celery and mushrooms and saute for around 10 minutes.

  4. 4

    Add in the salt, pepper, turmeric, ginger and stock and bring to the boil. Cover and simmer for at least half an hour if using bone stock or at least an hour if using water or vegetable stock.

  5. 5

    Add the bok choi, carrot and kale just before serving.

  6. 6

    Top with avocado slices and chilli to taste.
