This 'throw it all in a bowl' salsa bean salad provides a whacking amount of the daily required micro-nutrients:

3x vitamins A, C
all the daily fibre
70% carbs
60% protein, iron
40% potassium
30% calcium

Micro-nutrients, described by the WHO (World Health Organisation) as 'magic wands' are substances that are required by the human body for growth and development.

At present, around 2 billion people worldwide have micro-nutrient inadequacies, many of those are living in developed countries such as the UK and US where nutrient-poor food is abundant and consumed on a regular basis.

This is fab on it's own and will serve 2 people but I often split it between 4 and serve as a starter or side dish.

I love the texture of the quinoa and it's gluten-free, high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. What's not to love? #ChristmasGift

  • 1 cupquinoa, cooked
  • 1 cupkidney or black beans
  • 1 cupsprouted lentils
  • 1/2 cuptomatoes, diced
  • 1/2 cupedamane beans
  • 1/2 cupsweetcorn
  • 1/2small red onion, finely chopped
  • 1/2red chilli, finely chopped
  • handfulflat leaved parsley, roughly chopped
  • juice of 1/2 a lime
