Bacon puff pastry (Conwy Puffs)

The first time I had these tasty pastries was in Conwy, a beautiful fortified coastal town in North Wales. We were on a day trip out to North Wales as we always did as a family when I was a girl. My Mum then copied the recipe and we’ve been making these delicious easy Conwy Puffs ever since!
I feel like it’s not cooking really, I cheat using pre bought puff pastry, well if Jamie Oliver uses it it’s fine with me too! These taste so much better than shop bought pastries! I’ve used classics ingredients but will work well with lots of flavours, spicy chicken, Mediterranean veggies etc! Just use up the leftovers in your fridge!
I’ve even used pre grated cheese! I know so lazy but sometimes it’s about making something so delicious and tasty without to much effort! Kids love to make them too!

Pre heat your oven to 200 degrees. Roll out the pastry, and cut into 8 retangles

Take a baking tray and line it with baking paper and a sprinkling of flour to stop them from sticking!

Cut up the tomatoes and trim the bacon rashes.

Place a sprinkling of cheese down the middle, then add the bacon tomato!

Using a pastry brush, brush the milk onto the two corners without any ingredients on them, fold them into the middle, stick the corners together. Brush the outside with milk, sprinkling the herbs and cheese on top, repeat a further 7 times.

Put into the oven for 10 minutes, now don’t open the oven and turn the oven down to 180 degrees for a further 15 - 20 mins! Mine took 18 minutes! Tuck in and enjoy 😊
