You get a lot more product from the frozen chopped kale. Its already wilted from being blanched. So it won't shrink and you know how many portions you will have. If you don't have Canadian bacon use a good ham. Serve with a little red wine vinegar as an option or even hot sauce.

Ingredients

  1. 1/4 poundCanadian bacon see my recipe
  2. 1 poundchopped frozen kale
  3. 1-1/2 cupswater
  4. To tastesalt

Cooking Instructions

  1. 1

    Add the kale with the water to a pot.

  2. 2

    Cube the bacon. Now if you don't have Canadian bacon, substitute with ham.

  3. 3

    Add to the kale. Cook till you get the kale to the desired tenderness. Add salt if needed to taste. Serve I hope you enjoy!!!!
