Some differences between a Muffin and a cupcake are: A muffin can be savoury or sweet while cupcakes are always sweet, a muffin is not creamed unlike a cupcake where butter and sugar are creamed, a muffin has a coarser and heavier crumb structure while a cupcake shd be light, airy and a finer crumb structure.

Cooking Instructions

Greese the paper cups with little butter (very important). It will be difficult to peel off the paper if you dont. You can use a silicon brush to do this.

Mix all the dry ingredients in one bowl then in a separate bowl, mix the vanilla, egg and yogurt gently until smooth. Greek yoghurt is prefarable. I didnt have it so i used Nagari yoghurt but this does not have the required consistency.

Pour the flour mixture into the egg mixture and mix gently in one direction until everything is just incorporated and has a uniform colour then scoop into the muffin or cupcake papers and bake for 20 minutes.

Bake at a slightly higher temperature than you would a cupcake. It should come out with a mushroom shape or a dome top (the one i baked is the first picture BUT IF DONE PROPERLY, IT SHOULD LOOK LIKE THE SECOND PICTURE)

I wanted to make blueberry muffins, but I didn't have exactly everything typically needed (especially the amount of milk).I came up with this using the juices from my frozen blueberries as part of the liquid needed for making the batter and also didn't want to take the time to separate into muffin cups. So, this is what we get.It has a muffin sort of crumble to it, but it's really no too "muffiny" so I'm just calling it a "bake". Lol.On a side note, using the juices from the frozen berries gives it a lovely purple tint through the entire thing. ;) StephieCanCook
