Rinse the pork shoulder and cut it into large slices. Place the pork in a pot and add just enough water to cover. Add a little fish sauce, sugar, and a few shallots. Bring to a boil and skim off any foam. Once the pork is just tender, remove it from the pot.

In a skillet, sauté some shallots until fragrant, then add the pork. Stir and shred the pork as you cook, similar to making pork floss, but don't shred it too finely. Season with 2 tablespoons fish sauce (30 ml), 1 tablespoon soy sauce (15 ml), 1 teaspoon seasoning powder, and 1 teaspoon sugar. Cook until the pork is caramelized and turns a reddish color, but don't let it get too dry. Turn off the heat and add black pepper. The result is a fragrant, savory pork dish that's a bit like pork floss and canned pork—delicious!
