In a bowl take maida. Add 1 tbsp oil or ghee. Mix it well. Add water as needed to make semi_stiff dough. Rest for 1/2 hour.

For stuffing. Take a bowl. Add grated khopra, powder sugar, chopped raisins, chopped cashew nuts, cardamom powder and semolina. Mix well. Keep aside.

Again knead the dough well and make a small ball so as to make poori. Take a small ball and roll out thin poori. Take a gujiya mould keep the poori in the mould. Put a spoonful of stuffing in the center of the poori. Press it gently. Take out the dough from the sides of the mould. Repeat with other balls and stuffing. Cover it so that the gujiya will not dry.

Heat oil and ghee in Kadhai. Deep fry gujiyas till it become light brown in colour both the sides.

Once it is done. Transfer to a serving plate. Ready to serve.
