Preheat oven to 180 degrees Celcius. Add cherry tomatoes and garlic into a roasting dish, drizzle with olive oil and salt and place in oven for about 30 minutes.

Bring a pot of salted water to the boil. Add penne and cook for 10 minutes. Drain.

Slice cheese grillers into small pieces. Heat butter/oil in a large frying pan and add cheese grillers. Fry for 3-5 minutes

Add canned tomatoes, roasted tomatoes and sundried tomato sauce to pan and bring to a simmer.

Pop the roasted garlic cloves out of their skins and use a knife to make a paste. Add to sauce.

Add chilli flakes to taste, as well as salt and pepper.

Add spinach leaves, a handful at a time and cook until wilted before adding the next handful.

Toss penne in the sauce and place in an ovenproof dish. Crumble over feta cheese.

Bake for 20-30 minutes.
