Some leeks (or onion)
Some garlic
1 tbspflour
Some bitter
Some milk
Some mustard
Maybe some cayenne pepper
Cheddar

Finely chop the leeks and fry in loads of butter and olive oil until they loose all crunch

Add garlic

Add flour and cook off its raw taste

Add beer, simmer for a bit

Add milk and mustard, simmer for a bit

Add cheese

Grill back of toast, flip and pour on rarebit

Grill until golden
