Ingredients

  • Guacamole (avocado mashed with lime juice and some chilli flakes)
  • 1red bell pepper, diced
  • 1 packcold cooked prawns (mine were marinated in chilli and lime)
  • 1 tsppumpkin seeds
  • Drizzle extra virgin olive oil
  • Salt and pepper

Steps

  1. 1

    Spread the guacamole on the bottom of your plate. Top with the diced red pepper, prawns, pumpkin seeds and then drizzle with oil. Season with salt and pepper.
