Stuffed Banana / Pazham nirachathu

Be ready with all the ingredients.

Heat ghee in a pan, then fry cashews and raisins. Keep aside.

In the same pan, add heat ghee again and saute the grated coconut on medium flame for 2 minutes. Caution: stir continuously.

Add jaggery and mix well. Saute till the jaggery melts and coconut gets a good aroma and colour. Finally add the fried cashews, raisins and cardamom powder. Mix well. Switch off the flame. Let the mixture cool down.

Meanwhile make a semi-thick batter of plain flour, salt and water. Keep aside for a while.

Peel the banana and make a hollow slit lengthwise. Gently fill the coconut mixture inside the banana as much as possible.

Now dip the open end of the banana in the flour mixture.

Shallow fry these in ghee till golden from all the sides.

Serve immediately to enjoy this delicacy.
