Fennel and Orange Salad

Wash the fennel well and slice it thinly.

Peel the oranges, removing all the white pith, and cut them into pieces. Add them to the fennel along with the olives. Season with salt and pepper. Drizzle with extra virgin olive oil and mix well.

If desired, sprinkle with fennel pollen or ground fennel.
