Roast the Fried Rava in a pan with two tablespoons Ghee and keep it aside.

In the remaining ghee, Add cashew nuts, raisins and carrots and stir well. Then, keep them aside.

Take another utensil and pour cooking oil. Sauté the shallots, chillies, curry leaves, mustard and ginger in it. When the shallots are brownish, add two bowls water.

Let the water boil. Add pinch of salt while water gets boiled. Now add the Rava and let it cook till water is completely absorbed.

Now add the carrots, cashew nuts and raisins and stir well.

You can optionally pour two teaspoons ghee over the Upma when you serve it. You can also use other vegetables instead of carrot.
