Ingredients

4 servings
  • 2 lbswhole chicken thighs
  • 1 cupap flour
  • 1/2 tbsseasoned salt
  • 1/2 tbsgarlic powder
  • 1/2 tbsblack pepper
  • 1/2 tbspaprika
  • oil for frying
  • 2large shallots, sliced 1/4 inch thick
  • 3large carrots, peeled and cut 1 1/2 inches long
  • 1/2 lbcrimini mushrooms, quartered
  • 2 tbsbrown sugar
  • 1/2 tspground ginger
  • 1/2 canorange mango juice concentrate

Steps

  1. 1

    Mix flour, salt, pepper, and garlic. Dredge chicken in it. Place on a plate and let stand five minutes. Reserve 4 tbs of flour mixture.

    Get your daughter to cut the veggies. Lol

    Fry chicken in oil until browned. I added some sage and wild mushroom infused olive oil to the canola oil. Remove to a large casserole dish

    Arrange the veggies around the chicken.

    Reserve 4 tbs of chicken drippings. In the same pan add reserved flour to the drippings. Add brown sugar and ginger. Saute for two minutes. Add the juice concentrate and sauté until mixed. Add water until you get a thick sauce, about 1 1/2 cups

    Pour over chicken and bake at 350 for 45 minutes.

    Remove and let stand for five minutes. Serve.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
