You can use any cut of beef you like or have on hand. I happened to have sliced Wagyu beef at home, so I used that.

Simmer the thick coconut milk until the oil separates, then add the green curry paste and cook with the coconut milk. Add the chayote and cook, then pour in the thin coconut milk and simmer until the chayote is tender.

Add the sliced beef last since it cooks quickly, so there's no need to simmer it at the beginning. Add the green chilies and season to taste.

Once the beef is cooked, add the Thai basil leaves and turn off the heat. Serve with shirataki noodles or glass noodles instead of rice noodles, if you like.
