Ingredients

  1. 2 tbsp.olive oil
  2. 1green chilli,chopped and deseeded
  3. 1 sticklemongrass,chopped
  4. 1/2onion,chopped
  5. 1 clovegarlic,crushed
  6. 1 teaspoonground cumin
  7. 1 teaspoonground coriander
  8. 1 tbsp.Thai fish sauce
  9. 1lime (zest and juice)
  10. 1small chicken breast
  11. 400 mlcan of coconut milk
  12. 1 handfulfresh coriander leaves to garnish

Steps

  1. 1

    In a saucepan fry the chopped onion in the olive oil for a few minutes.

  2. 2

    Add the remaining ingredients except the coriander leaves,and bring to the boil.Simmer for about 10 to 15 minutes.

  3. 3

    Whilst step 2 is cooking,fry the chopped chicken breast in a little olive oil until browned and cooked through.

  4. 4

    Allow to cool to room temperature (as per manufacturer's instructions).

  5. 5

    Pour the contents from Step 2 into the Nutri Ninja and blend for about 30 seconds.

  6. 6

    Return the contents to the saucepan and add the cooked chicken breast.Gently reheat until ready to serve.
