Ingredients

4 servings
  1. 1 1/3 tbsplime juice
  2. 2 tspsoy sauce
  3. 1 tspginger root, minced
  4. 1 tspagave nectar
  5. 1 clovegarlic, minced
  6. 1 tbspcucumbers, diced, for garnish
  7. 1 tbspcilantro, chopped
  8. 3 tbsppowdered peanut butter
  9. 1 tbspwater
  10. 1 tspred curry paste
  11. 3 tbspunsweetened coconut milk, light
  12. 1 lbchicken, cut into strips

Steps

  1. 1

    Marinate chicken in 1 tbsp lime juice, soy sauce, ginger, agave nectar, and garlic. (1 hour - overnight)

  2. 2

    Preheat grill on medium high heat

  3. 3

    Sauce - whisk - coconut milk, peanut butter powder, water, curry paste, and 1 tsp lime juice

  4. 4

    Cook skewers for about 3-4 minutesper side, until cooked through

  5. 5

    Serve with sauce for dipping

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
