Vietnamese Beef Stew with Baguette (Bò kho bánh mì)

Rinse the beef brisket and cut into large pieces. Marinate with 1 minced garlic clove, 1 teaspoon salt, 1 teaspoon seasoning powder, 2 teaspoons sugar, 1/2 teaspoon black pepper, and the beef stew seasoning oil. Mix well and let sit for about 30 minutes to absorb the flavors.

Heat a pot with 3–4 tablespoons cooking oil. Sauté 2 shallots until fragrant, then add the beef and stir until browned. Add the lemongrass stalks (lightly smashed), pour in enough water to cover the beef, and simmer on low heat for 20 minutes. Add the carrots (cut into chunks) and continue simmering until the beef and carrots are tender. Pour in the fresh coconut water. Mix a little tapioca starch with water and add to the stew to slightly thicken it. Adjust seasoning to taste.

Serve the beef stew with baguette or rice noodles for a delicious meal.
