Crispy Baked Polenta Fries

The other night, to celebrate Carnival, I made a fun and tasty dinner... For the appetizer, we had crispy baked polenta fries: I have to admit, they were a wonderful discovery and totally addictive—you can't stop at just one, so it's best to make plenty! You can use different types of polenta and customize the flavor with your favorite spices (for example, white corn polenta with paprika and cumin, or taragna polenta with thyme and sage...). But the best part is how incredibly crispy they are, just like classic French fries, but since they're baked, they're healthier too. With so many positives, I'm sure you'll fall in love with them too, and they'll become a must-have for appetizers or buffets!

Bring water to a boil, add salt, and slowly pour in the instant polenta, stirring constantly. Cook according to the package instructions.

Season the polenta with olive oil, dried herbs, and grated Parmesan (if using), mixing well while the polenta is still hot.

Spread the polenta in a baking pan lined with parchment paper, smoothing it out to about 1/3 inch (7–8 mm) thick. Let it cool completely so it firms up.

Once the polenta is cold, cut it into sticks and arrange them on the baking pan. Sprinkle with breadcrumbs, drizzle with a little olive oil, and bake in a preheated oven at 365°F (185°C, convection) until the sticks are golden and crispy, about 30 minutes.

Remove from the oven and serve the polenta fries hot, with your favorite dipping sauce if you like.
