Idlis are soft and spongy dish from South India which is favourite of all and famous in all over India. Idlis are made from fermented batter of rice and black lentils ( urad dal ) . Idlis are steam cooked in it's special stand. Size of idlis can be different.
Today, I have made mini idlis with ginger and fenugreek leaves and served it with a spinach sauce. It is good and healthy option for snack, breakfast and as a starter in parties too.

Today, I have made mini idlis with ginger and fenugreek leaves and served it with a spinach sauce. It is good and healthy option for snack, breakfast and as a starter in parties too.
Steps

For spinach sauce: heat oil and saute green chillies, onions and garlic.

Add spinach puree and salt. Cook for 2-3 minutes. Turn off the heat and keep aside.

For idli: add grated ginger and fenugreek leaves in idli batter, add salt and mix well.

Heat the steamer, grease idli stand.

Fill the idli stand with prepared idli batter and steam cook it.

Once cooked, let it cool down a little, scrap the sides with knife and unmould idlis from the stand.

Serve with the prepared spinach sauce.
