Sweetcorn and Rice Fritters

Is not easy too keep them compact,my first batch that I shallow fried in Cooking Oil - turned into egg fried rice - for the further batches I made big chunky ones,I covered them in extra Self Raising Flour - on both sides and at the sides - is a trick I did last time I made them,so that they do not fall apart,the recipe said either 3 or 4 minutes shallow fried each side,but I had too cook them for longer,because they are much thicker,once cooked - my intentions are too let them get cold and then I will bake them in the oven at a later time.
Can use pre-cooked Packaged Rice,but you can boil your own raw White Long Grained Rice - once cooked - let it get cold and then use accordingly.The Fritters are nice when dipped in Mayonnaise - a pinch of Chilli Powder is good,but if you only have the mild Chilli Powder than a smallish Dessert Spoon of Mild Chilli Powder will do - Black Peppercorns will need too be blitzed in, with the Pasteurized milk within a Nutri Ninja fast Blender,or could just use the milder Ground Black Pepper,I used a Dessert Spoon of Table Salt within the raw Fritter mix as well.

Ingredients

  • 225 gstreaky bacon
  • 200 gsweetcorn within a Can
  • 300 graw White Long Grain Rice
  • 2 teaspoonsmild chilli powder
  • 2 teaspoonsGround Black Pepper,or 2 tsp of Black Peppercorns
  • 2 tablespoonsfresh Coriander
  • 3eggs
  • 3 tablespoonsSelf Raising Flour
  • 3 tablespoonsmilk
  • 2 tsp.table salt
  • Extra Self Raising Flour if required
  • Olive Oil,if not then Vegetable Oil

    In the One bowl,or saucepan,put - or leave the cooked rice in the saucepan and add the thin snipped of raw bacon pieces and snipped fresh Coriander,plus add the drained tin of Sweetcorn.

    In the other bowl whisk up 3 eggs,then add the Self Raising Flour,only 3 tablespoons of that flour,combine - and then add the Pasteurized milk,3 tablespoons,or 9 Dessert spoons,mix - then season,or just add the salt,add a pinch of chilli powder,or if using the mild chilli powder then use 2 small teaspoons of that - basically you have just made a spicy pancake batter mix.

    Pour the batter mix over the bowl with the rice mixture in it - and then mix it in all together.

    Put Self Raising Flour in a baking tray and then drop some blobs of the raw Fritter mix on too the flour,make a small hill of the mixture,flatten a little and then generously spoon flour over the top and form 4 big bundles in the large frying pan with lid and shallow fry in hot cooking oil.

    Fry mainly slowly for 10 minutes each side,keeping lid on mostly,ensures that they will be cooked inside.Serve with mayonnaise.
