Best split pea soup I've ever had. Been making this recipe since the 90s. I've used lentils instead of split peas, I use either butter or olive oil, I've thrown in a turkey leg, I've thrown in a smoked turkey leg, but i think it tastes best meatless.

Ingredients

8-12 servings
  1. 1 lbsplit peas
  2. 6large carrots
  3. 5 stalkscelery
  4. 1medium-large leek with dark green top removed and discarded
  5. 1large (not gigantic) onion
  6. 4 tablespoonsolive oil Or unsalted butter
  7. 2 teaspoonssalt
  8. 9-10 cupswater

Cooking Instructions

    Small chop or large dice all vegetables.

    In Dutch oven (large pot) heat olive oil or unsalted butter to medium-low

  3. 3

    Sautee veggies slowly about 12 minutes until cooked down slightly, stirring occasionally.

    Add split peas, water and salt. Bring to boil, reduce heat to simmer, cook 75 minutes. Taste and add more salt if needed.
