Put all pesto ingredients in a food processor and whizz up until smooth. Add oil as needed. Set a side

Wash and chop aubergine. Dry well with kitchen paper. Heat oil in a pan and fry until brown on both sides. Preheat oven to 180.

Lightly grease a baking tray lined with baking paper with olive oil. Put largest slices of aubergine on first. Add spoonful of pesto, then a few cubes of mozzarella

Layer up until all ingredients are finished. Place a cube of mozzarella on the last one. Bake for about 15 mins 😄
