Put the chopped mint, lemon juice, sugar and berries into one bowl

Mash the ingredients together

Pour it into a pot and boil for 10 minutes, stirring occasionally

After the mixture has boiled for 10 minutes, add the pepper and chia seeds. Mix and then boil for another 10 minutes.

Once the jam starts pulling together it is ready.

Using a funnel, pour the jam into an airtight container. Place a piece of parchment paper between the jam and the lid. Let the jam cool entirely before storing.

This jam will keep for over 3 months! Enjoy!
