Ingredients

  1. Crust:
  2. 250 gAP flour
  3. 3/4 tspsalt
  4. 3/4 tspbaking powder
  5. 100 mloil (I used half olive oil, half neutral oil)
  6. 100 mlwarm tap water
  7. Quiche filling:
  8. 1 packagesoft tofu (about 300g), drained for 10 min
  9. 500-700 gonions, sliced
  10. 1 packagesmoked tofu, pressed
  11. (to taste) salt, soy sauce, black pepper, paprika, turmeric
  12. (to taste) garlic powder, Italian herbs
  13. 2 tbspnutritional yeast (optional)
  14. 1 tbspsugar (or a bit less)
  15. 1 tbspcornstarch mixed in a bit of water
  16. 1/4 tspblack salt (optional)

Steps

    Put all crust ingredients in a Tupperware container. Close it tightly with a lid and shake vigorously until a ball of dough comes together.

  2. 2

    Tip dough in a parchment-lined pie pan. Flatten with your hands and prick with a fork. Blind bake for about 10 min in a 350°F/180°C oven. Leave to cool.

  3. 3

    Cook onions and sugar low and slow. Season with ingredients listed above. Add smoked tofu, soy sauce, nutritional yeast and black salt (if using). Set aside.

  4. 4

    In a separate pan, mix soft tofu and cornstarch slurry. Cook for a few minutes until thickened.

  5. 5

    To assemble: put 2/3 of the onion mixture on the crust, then pour the tofu mixture over it and finally arrange the remaining onion mixture. Bake covered for 20 min, then uncovered in a 180°C oven for 15 min or until set. Enjoy at room temperature :)
