Koliva for the repose of the souls of our loved ones who have passed away....

The day before, cook the wheat according to the package instructions. It should be soft when tasted. Drain and spread it on a towel to dry. Keep it in the refrigerator.

Wash, dry, and roast the sesame seeds. Place them on a baking sheet in the oven at a low temperature to roast slowly, stirring frequently. Once roasted, grind them in a food processor or crush them in a mortar.

In a bowl, combine the wheat, walnuts, raisins, cloves, and cinnamon. Gradually add the sesame seeds and breadcrumbs. Mix until the mixture is dry. You may not need all the breadcrumbs, or you might need more....

Taste and adjust the cinnamon or cloves if desired.

Place the mixture in the bowl you will decorate. Press it down with a paper towel to smooth the top.

Add a thin layer of breadcrumbs on top and press it down with a paper towel.

Add a thin layer of powdered sugar and press it again with a paper towel.

Add a thin layer of granulated sugar just to give it a slight shine.

Then decorate as desired. Make a cross in the center. On either side, write the initials of the deceased's name. Around the bowl, create a border. Until a year has passed, the circle should remain open at the bottom (as is the custom in our area). If desired, create various designs or flowers.
