Chipotle Chicken Tinga

Cook the chicken breast, then shred it well. Reserve the broth from cooking the chicken.

Blend the cooked tomatoes and 3 chipotle peppers from the can with 1/2 cup of the reserved chicken broth.

Blend until smooth and set aside.

Meanwhile, heat vegetable oil in a skillet. Add the sliced onion and sauté until it becomes slightly translucent.

Add the shredded chicken to the onions and sauté a bit more.

Pour in the blended tomato and chipotle mixture.

Bring to a boil, then season with salt and pepper to taste. You can also add another whole chipotle pepper from the can if you like it spicier.

That's it! Enjoy with tostadas, tortillas, or even in a sandwich roll. Enjoy!
