I wanted to find a use for a punnet of strawberries that I’d left in the fridge a little too long! I intend to have this with homemade granola (see separate recipe) and yoghurt for a yummy breakfast!

I wanted to find a use for a punnet of strawberries that I’d left in the fridge a little too long! I intend to have this with homemade granola (see separate recipe) and yoghurt for a yummy breakfast!
Steps

Chop the strawberries into quarters and add to a pan.

Juice a lemon and add 2 teaspoons to the pan (I used the rest as part of a salad dressing so not to waste the rest).

Add the sugar to the pan.

Heat the pan on a medium heat and bring to a simmer (bubbles will start to form). This only took 1-2 mins.

Reduce the heat to the lowest possible and continue to cook for 10 mins, stirring every 2 mins or so.

Once the strawberries are nice and soft, use the back of a spoon to mulch them down. Continue to do this for 3-5 mins, until the consistency of the coulis is as thick as you like it.

Remove from the heat. If you want a completely smooth coulis you can sieve it (using a metal sieve so it doesn’t melt). I’ve left mine with some chunks in it. Once cooled, leave in an airtight container - it will easily last for 5 days. It can also be frozen. Enjoy!
