Ingredients

  • 2 stalkslemongrass (sliced diagonally)
  • Galangal (sliced)
  • 3-4kaffir lime leaves
  • 2 stalksculantro (or substitute with extra cilantro if unavailable)
  • Oyster mushrooms (as desired)
  • 1.1 lbschicken drumsticks (about 500 grams)
  • 1lime
  • 10Thai bird’s eye chilies (sliced)
  • 1 tablespoonfish sauce
  • 1pork bouillon cube
  • 2tomatoes
  • 2yellow onions (thickly sliced)
  • 4 cupswater (about 950 ml)
  • 1 tablespoontamarind paste
  • 1 stalkculantro (chopped)
  • Cilantro (for garnish)

Steps

  1. 1

    Pour the water into a pot and bring to a boil over high heat.

  2. 2

    Add the prepared galangal, lemongrass, and kaffir lime leaves to the pot.

  3. 3

    Once the water is boiling, add the chicken drumsticks (do not stir).

  4. 4

    Add the oyster mushrooms, onions, and tomatoes.

  5. 5

    Simmer for about 10 minutes until the chicken is cooked through.

  6. 6

    Add the bouillon cube, fish sauce, tamarind paste, and chilies to season.

  7. 7

    Stir in the chopped culantro, mix well, and taste to adjust the seasoning as desired.

  8. 8

    Once the flavor is to your liking, turn off the heat, squeeze in the lime juice, garnish with cilantro, and serve hot in a bowl.
