I always want to learn new and different recipe and love to try Alhumdullilah always succeed sometimes never but trying hard to learn this time making katoori chat very heat these day tried 2 to 3 times but fail to make proper katoori , this time perfectly made and succeed. Katoori made with all purpose flour then kneading then after rolling there are some tricks first rolling then putting steel slightly greased bowl in it then dough cut from edges then deep fried in wok then carefully put the bowl out from katoori then frying the inside part. This way make perfect katoori then some boiled chickpeas, boiled potatoes some baisan boondian mix of three different chatnis one is khatti meethi chutney , second theeki hari chutney and third is sweet and salty yogurt sauce and top it with some chopped onion and tomatoes which make katoori chat out of the world and my family loved it and my husband said “ Ajj tak aisy chat nahi khaye.”

First have a look we to prepare and lined up these thing boil chickpeas (cholay) green and red chatnis and yogurt sauce, baisan boondiyan fried katooris chopped onion and tomatoes and saiv and chatmasala

Now first preparation is for katooris. In a bowl add flour, cornflour, rice flour salt oil and mix all then knead it with water it’s not a soft dough after kneading rest it for 15 mins. Mean while make chutnis

Now for red sauce add imli pulp salt gurr chilli flakes and ginger powder to a pot and add little water then cook till jaggery melt and it slightly thick

For green sauce add mint and coriander (dhania) green chilles cloves of garlic lemon salt cumin seeds to chopper and make a sauce

For yogurt sauce add yogurt salt and sugar and water to blender

Now for baisan bondii add all ingredients well in a bowl then heat some oil in wok then with the help of wok spoon add mixture and fry quickly made in just a minute

Now rolled the dough and prick it with fork and put the greased bowl inside and cut all edges and fry it in deep wok then carefully put out the bowl and fry from both sides and in this way you will get 10 katooris

Now assembling time just take fried katoori then add some chickpeas and potatoes then add one sauce then add some fried bondian and then add 1 sauce then add Tomatoes and onion and then 3 rd sauce then add some chat masala and saiv and serve
