This katori chaat is a healthier version of chaat because we can totally omit the frying step in it, by baking up te katoris that contributes towards it's healthyness. You can preserve these baked Katooris for a longer period of time into an air tight jar.

Soak lobia in water for 6 hrs and then boil it, then in 2 tbsp oil take cummin seeds & chopped onions and soute. Add green chilli paste, crushed Red chilli, tomato, corriender powder and salt. Add lobia and boil potatoes into this and cook it for 2-3 mins and then add chilli garlic paste & corriender leaves and then take it off from stove.

Add all ingredients in flour and make it into a semi-hard dough. Keep it covered for half an hour, grease the back side of the baking tray, roll that dough into a big rotti and cut out shapes from it by means of a cutter, Set these pieces onto the greased back side of the tray, prick it with fork and then bake it over 180°C for 10-15 mins.

When your baked katorri is ready and cooled down, add chaat into it, then sweet imli chutney, Green chutney, onions, tomatoes, chaat masala, youghurt and seww. It is ready to serve.
