Goats Cheese Roasted Tomato Pepper Salad

Pre-heat oven to 190°

Once heated, put the red pepper half into an oiled roasting tin face down. Drizzle with oil and season with salt and pepper and pop into the oven for 5 minutes

Slice your cherry tomatoes into halves

After 5 minutes, remove the tin from the oven and add the tomato halves face down and drizzle with a little oil. Pop back into the oven for another 10-15 minutes

Add the leaves to a salad bowl

Dice the Cucumber into small segments and add to the bowl

Finely dice the spring onions and add to the bowl

In a separate pot/bowl add 1 teaspoon of pesto and a generous glug of olive oil, season with salt and pepper and mix with a spoon

Add the pesto mix to the salad bowl and mix thoroughly with the ingredients

Once the skin of the tomatoes and pepper are wrinkly, remove the tin from the oven and allow to cool

Add the roasted tomatoes straight to the mixture

Peel the skin off of the pepper and chop into small pieces, before adding to the mixture

Crumble the goats cheese into the salad and mix well
