Oven roasted yam with native palm oil sauce

This is charcoal free roasted yam and since i started roasting mine at home, i lost interest in roadside roasted yam.
This sauce is super easy. For this sauce i have learnt that the lesser the ingredients the better.

This is charcoal free roasted yam and since i started roasting mine at home, i lost interest in roadside roasted yam.
This sauce is super easy. For this sauce i have learnt that the lesser the ingredients the better.
Steps

Slice the yam to a thickness of 2 inches and no thicker so it gets done evenly

Place in the oven and allow to roast until color changes and yam is done

Mix the seasoning, salt with the grinded dry pepper in a small bowl with the pal oil and set aside

On very low heat, place an empty pot on heat and pour in the sliced onions and peppers
- 5
Continue stir frying until the onion changes color a bit then add some of the palm oil mix (not all)

Stir fry for 2minutes still on low heat then pour this fried mixed into the rest of the palm oil mix and stir

The unripe pepper gives this sauce a unique taste and aroma and also the palm oil stir frying gives a crunchy feel to the sauce. Enjoy 😊
