Mix sooji,dahi, ginger chilli paste, salt, sugar, crushed garlic cloves, haldi in a bowl.

Add water as per the requirement to make a thick batter. Let it rest for 30-40 minutes till it absorbs water. You can add water to adjust the consistency(idli batter consistency required).

Add eno or baking soda, whatever is available. Mix properly. Now transfer it onto a greased plate.

Steam the dhokla for 10-12 minutes. You can keep checking. Similarly, you can steam the remaining dhoklas.

After they are steamed, cut them in square pieces.

TEMPERING :
** Take a kadhai and heat oil in it.
** Once the oil is proper hot, lower the flame and add mustard seeds, curry leaves,sesame seeds and dhokla square pieces.
** Saute well. At last, sprinkle some finely chopped coriander leaves. - 7
Serve the dhoklas with a green chilli or green chutney or ketchup!!
