Amritsari Pindi Chole with Bhature is a very popular dish from Punjab. This is also considered as one of the famous street food, almost everywhere in India.
This spicy dish from Punjab is a combination of chana masala (spicy white chickpeas gravy) and bhature, a fried bread made from maida (all purpose flour). For Chole: Soak the chickpeas overnight. In the morning, drain out the water. Rinse the chickpeas. I made it in Instant Pot. Added the chickpeas to the Instant Pot with 1 1/2 cups water and 1 cup tea (made with 2 tsp tea leaves and 1 cup water). You can add it to a pressure cooker with 2 tea bags or 2 tsp tea tied in a muslin cloth. Add 2 1/2 -3 cups of water, salt, baking soda, bay leaves, cinnamon sticks, cloves, black and green cardamoms. Close lid and pressure cook for 3-4 whistles.

I cooked in Instant Pot for 3 minutes. Open lid and check if the chickpeas are cooked. Separate the boiled chickpeas and water. Keep the chickpea masala ready.

Blend and keep onion paste, ginger-garlic paste and tomato puree ready.

Heat 3 tbsp oil in the pot and add onion paste and saute for a minute or two. Add ginger-garlic paste and saute it with the onion paste for a minute. Add tomato puree and saute for 2 minutes.

Add the prepared chole masala and mix. Add the boiled chickpeas and mix.

Add the chickpea water and cook for 2 minutes. With the help of a masher, mash the chickpeas a little to make gravy little thick. Cook for a minute till oil separates a bit.

Chole masala is ready. Add chole in a serving bowl and prepare the tadka. Heat 3 tbsp oil. Add chopped garlic and green chillies. Switch the flame off after adding the masala and immediately pour the tadka over the prepared chole. Give it a slight mix.

Delicious Amritsari Pindi Chole is ready. Serve it with Bhature, Poori or Jeera Rice, onion rings, green chillies and lemon slices.

For Bhature: In a large mixing bowl, take all purpose flour. To it, add semolina, sugar and salt. Next add, baking powder and baking soda and mix well.

Add oil and rub with the flour. Add curd and start to knead the dough.

Knead and punch the dough well for atleast 5 minutes. Grease the dough with oil. Cover with moist cloth and rest for atleast 2 hours.

Further, roll and get to a long shape. Pinch the dough into medium sized balls. Then make balls between your palms. Finally, roll the dough evenly into circles using rolling pin. Roll neither too thin nor thick.

Heat oil in a deep frying pan. When the oil is sufficiently hot, add one bhature and press with the spoon to puff up. Once they begin to puff, splash oil over the bhature till they puff completely. Flip over and fry the bhature till golden brown all over. Drain the bhature on a kitchen towel to remove the excess oil. Fry all bhature in the same way.
