One Snack and known by many names down South, these make for an excellent iftaar treat too. These are deep fried yet does not soak enough oil while frying as the paste used is a thick one. Soaking it is also an important step to be followed and likewise making a thick paste is important without using much water. Otherwise they will not hold shape and also soak lots of oil. Kids will love these as a tiffin treat. Melt in mouth and super fluffy, these are a treat to the tastebuds.

Medu Vadas or to put it in simple terms, Indian Savoury Doughnuts are a perfect choice for a family Tea-time snack. It goes very well alongside Coconut Chutney. Or can also be served with any Indian Chutney of your choice.

Ingredients

30-40 minutes
6 servings
  • 2 cupsBlack gram or Urad daal
  • 1 tbspSalt
  • 2 tbspRaw Rice
  • 2 tbspGinger grated
  • 4-5Green chillies finely chopped
  • 2Onions chopped
  • 2 SprigsCurry Leaves finely cut
  • 12-15Black Peppercorns
  • 1/4 cupCoriander Leaves finely chopped

Steps

30-40 minutes
  1. 1

    Soak dal and rice overnight for best results. Grind to a smooth paste using as little water as possible. It should be a thick one yet smooth. Add salt and other ingredients to it.

    Mix well and shape into vadas either on a banana leaf or in your palms directly and slowly slide into the hot oil. Deep fry on medium high heat until golden and crisp. Serve hot with coconut chutney alongside. These make for an excellent option at tea-time.
