I always used to make humitas in New York, and this was my first time making them with humero corn. I had always used American corn before. The texture with humero corn is quite different. Both ways, humitas turn out delicious. Humero corn makes the mixture thicker, while American corn gives a softer and sweeter result. I made these humitas in mid-January, before the pandemic started.

Ingredients

12 servings
  • 6large ears of humero corn (or substitute with 6 large ears of sweet corn)
  • 1 cupmilk (240 ml)
  • 3 1/2 teaspoonssalt, or to taste
  • 3 teaspoonssugar
  • 12basil leaves
  • 1/4 cupvegetable shortening or vegetable oil (60 ml)
  • 2 clovesgarlic, minced (optional)
  • 1large onion, chopped
  • Corn husks (from the ears of corn)
  • Kitchen twine or thin string for tying

Steps

    Preparation
    With a sharp knife, cut off the thick end of each ear of corn where the kernels start, then cut off the other tip. Carefully separate the corn husks without tearing them and cover them with a kitchen towel to keep them from drying out.
    Remove the corn silk. Starting at the tip, use a knife to cut along the ear and remove the kernels.

    In a blender, blend the corn kernels with the salt, sugar, and basil leaves until you have a creamy mixture.

    In a large, wide pot, heat the vegetable oil or shortening and sauté the onion with the garlic. Add the blended corn mixture and cook slowly, stirring constantly with a flat wooden spoon to prevent sticking.

    To assemble the humitas, overlap the wider ends of the corn husks. Place your desired amount of the corn mixture in the center. Fold the edges over like an envelope and tie with kitchen twine or string. In a large pot, bring plenty of water to a boil and cook the humitas for about 40 minutes. Cut the string before serving. Serve as a side dish or main course, accompanied by salad and pebre.
